When I purchased these little ice cream sandwiches at Trader Joe’s a while back, I was very hesitant. I’m just not into trying things made of “tofu” or “soy”. Before this whole allergy started I had never even tried soy milk or even really thought to.
Anyway, I must say that these Tofutti ice cream sandwiches are wonderful. If someone were to hand one to me without saying what it was I would really have no idea it was a tofu “thingy” at all. It’s creamy, sweet, and has no weird after taste. Seriously, this is good.
So, while my family is scarfing down the ice cream…I’m in heaven with this little thing.

I just have to post this recipe for some wonderful milk free frosting, I’ll be back later with a picture but for now I’ll just post. You can dress up this frosting with some orange zest, or substitute the water for coconut milk or vanilla soy milk.
Anyway, here it is:
3 1/2 cups powdered sugar
1/2 cup vegetable shortening
1/4 cup water
1/2 teaspoon vanilla
Blend with a hand or standing mixer until fluffy.

It’s been about four weeks now that I have been on a dairy free diet.
We found out that our, then, 9 week old was most likely allergic to the milk in my breastmilk after he had blood in his poop. When I saw this I instantly panicked and went online to see what I could find and everything said this was sign of a dairy allergy.
I called the doctor the next day and we went in, she recommended that I go on a dairy free diet and see if his symptoms go away.
Sure enough, a few days in the blood stopped and he was much happier. I didn’t realize that his fussiness at certain times during the day were related to the dairy I was eating.
I have completely given up all that contains dairy and cassein, that includes coffee creamer and some breads and so much more.
I thought in the beginning that it would be easy to cut all those things I love to eat out, but I’m finding much more difficult than I could have expected.
I know that this is the best for my baby and so I will “keep on keeping on” with this diet and lifestyle change for him.
